CR gives good advice. I've done that ride many times in both directions. One thing we usually do when we ride along the coast is to stop in seafood restaurants for lunch and dinner and sample the offerings of each place. I've got a soft spot for clam chowder and the clam chowder really differs in the different restaurants.
Lots of good info in Rocky's post for sure. There's a lot to see on the PCH and I would add the Otter Crest loop and Yaquina Head Lighthouse north of Newport and I would absolutely take the short side-trip to the Cape Perpetua day use area. It's pretty steep and windy, but paved and only about 2 miles:

I probably wouldn't stay in Crescent City two days, but I may be a little biased, I live only 2.5 hours from there. The Chart Room for lunch and Point St. George are both must sees in there IMHO.
As much as I love the Oregon Coast (I grew up there) I wouldn't travel all the way through Oregon without at least one detour to the Cascades. I'm partial to Crater Lake and the North Umpqua Hwy 138 is a great ride along the river with some spectacular waterfalls, some you can ride right up to.
Totally agree with Avenue of the Giants and Hwy 1 from Leggett to Fort Bragg.
