Might want to post this in the Florida Crew Section lot of wizards in there for this run .. I am North FL now, but would think start out on 17 and slowly work your way east to maybe 27 then to 40 ..
I would grab 17 to Arcadia and jet 70 over to 95 and then North. (or 441 if you like isolation) I used to live over there and last time I took this route to the East Coast it was not a bad trip. I do remember that 70 was a speed trap esp. by Lake O.. If you hit the Space Coast around lunchtime I can tell you some great spots to break bread....
