Have a blast!!!
Vegas is in the desert, so it can get warm even in October, but even "warm" will not be bad in October. Williams is at a pretty high elevation (as is Flagstaff and the South Rim of the Grand Canyon) and it is possible to see snow in late October/early November. Typically though, temps will be very mild during the day (perfect for riding) and chilly at night (likely not freezing though).
Williams or Flagstaff would be good places to stay. I prefer Flagstaff myself.
For a day trip...
It is hard to beat the Grand Canyon. There is a really nice loop out of Flagstaff up the 180 to the 64 and the south entrance, then east along the rim on the 64 to the 89 and then south back to Flagstaff. If you like sight-seeing, you could easily take all day doing this. I would strongly recommend packing a picnic lunch.
The ride down to Sedona is short, but worth it. There is a lot of ways of incorporating Sedona into a loop. The ride over Mingus Mountain (between Sedona and Prescott) is a really nice ride. The ride along Lake Mary Rd and the 260 between Camp Verde and Happy Jack is also a really nice ride. There are lots of places to site see, eat and shop in the Sedona, Cottonwood, Clarkdale, Camp Verde, and Jerome area; and especially if you like wine. No matter what you do though... the ride north on the 179 and 89A through Oak Creek Canyon (north of Sedona) is a "must do".
Another cool place is the Painted Desert and The Petrified Forest. The ride through the Park was a very pleasant surprise for me. This is the high plateau of AZ though, so lots of rolling hills and grass, which is not too exciting.

While in Vegas, the ride up to Mt. Charlston is nice. If you want to spend an hour or two off of the bike, Red Rock State Park is nice. About 20 miles or so from the strip.
As for the weather, as stated, be prepared for everything. October is a nice time. Can be hot, can be cold, just never know out here. Oak Creek Canyon, Prescott are real nice. No matter what, you will have a great time...Enjoy
