This was the same route I was going to suggest. Take 81 north into PA to 84 east into NY. Once in NY take a side trip north along the Delaware river on route 97. You wont be disappointed. pretty good bar up along side the Barryville bridge to have a burger. little further up and there is one run by one of the campgrounds I cant remember the name of it though.
If you make that trip make a day or 2 out of it and get back on 84 east towards Newburgh and go to OCC. alot of hype but they do have bikes on display in the showroom. From there you can go south on route 9 along the Hudson river and into Bear Mountain State Park, and down intoNYC.

Blueridge Parkway to Skyline Drive
Skyline Drive to PA,
Then back moutain roads of PA to NY
Then down the east coast.....
