Hells Canyon
Not sure where your coming from or going, so that would make a difference for n to s or s to n.
I can tell ya the rattle snake north out of enterprise is awsome if your heading north then hook up with lolo.
West out of halfway to west of Baker city is also some GREAT riding, Sumpter and around that area.
If ya go from enterprise to halfway and then want to run the hells canyon along the river is right there out of oxbow. And then you can drop out south thru cambridge Id. side.
To me all depends on where ur coming from and where you are going.
There really aren't any bad routes in that area as long as ya stay off the BIG roads.

Cross thee river out of Oxbow, and go play a little up towards the damn to the north, you will know why its called Hells Canyon, then when ya come back go up around the damn to the south and into Cambridge hwy 71....YOUR Gonna Love it
Make sure to stop at the coffe stand in Cambridge for an Iced mocha, Your gonna need it!

I wouldn't sweat going on the road into the canyon. The only time people do that is to fish from what I've seen. If you have seen the Grand Canyon you are going to be surprised when you see this one. Not bad, just totally different. Like someone else said there is potholes to watch out for. Sumpter is a nice area also.
Also, for anyone not used to Oregon they pump your gas. There is an exception with diesels and bikes. You can do it yourself on a motorcycle. Sometimes you will need to ask, other times I've had them say, "no way I am going to spill gas on a biker's bike". LOL
