To make it simple, just forget about the 02 sensors. YOU control the values, so YOU control the fuel. The table you see (and edit), are the COMMANDS that you send the ECM. It does what ever you tell it to do. The changes that you make can be felt right away, as soon as you switch maps.
For example: The first 2 rows represent idle speed (750-1000rpm). Take your base map, add +1 to the whole first row(from 0.981 to 0.982). Save it as a new map. Make another, but +2 this time. And so on. Make some changes to the 2nd row too, save them. Load 6 maps on the bike, try each one. You will know in 5 minutes what range your idle needs to be.
From off-idle on up, you go from there. Since I posted those screen-shots, I've been testing and tweaking more and more. My bike is running better and better, and I'm having a blast tuning it.

Wouldn't increasing the Lamda(decimal value) make the bike leaner?

This particular table is the "fuel" table. There are many other tables you can adjust, but I'm having good results with just this one table. This is a video I posted just the other day. And since then, it's running even better!

OK, I thought that you were adjusting the target AFR in the range that the NB o2's could read by the look of the chart.

The main tables you want to work with for changing the mixture are the VE tables which are a representation of the airflow model. You are directly altering the fuel delivery as the VE is a command function for the ECM. On the other hand the AFR/Lambda tables are used to calculate the mixture as a target, ideally the VE table should be synchronized to the specific AFR/Lambda defined in the table, these tables are also used as a control function if you are operating in closed loop. Small changes made in the AFR/Lambda tables are generally going to be insignifigant, for example if you change from lambda of .984 to lambda of say .960 you have only changes the mixture by about .3 of an AFR point, a higher Lambda value is leaner lower is richer. A lambda value of 1 is always stoich for a given fuel. Also note closed loop operation is only active from .977-1.02 Lambda so if you are requesting a mixture leaner or richer there will not be closed loop feedback. Hope this info helps, I will be leaving for a trade show for the weekend and when I return I will try to post up a bunch of new Power Vision tuning info and details. It is great to hear users are enjoying the product.

Thanks, Jamie.
Hopefully SOON, we can get a PowerVision tuning thread here on HDForums.
I want to learn as much as I can, but the info seems to be non-existent. The PowerVision tuner is so easy to use, it is a great piece of equipment. Now we just need great knowledge to go with our great new equipment!
