Inter-changing wheels
I have an 07 Deluxe with stock wheels. Previous owner let them get a little pitted(Wisconsin salt) and now I'm looking at a set of laced smooth profile wheels off of a 2012 Deluxe. Will they work for me? The 2012 has ABS but can I just change the rotor?

I was in the same boat with corroded smoothie rims, and I wanted to lace in new hoops and do an aftermarket tubeless sealing strip. However, I found some take-off's from a 2015 Deluxe and made them fit on my '06 Deluxe. The bonus was that they were nearly new, and already the tubeless type laced wheel.
I'm not certain on the bearing sizes on your '07. Mine were 3/4". The newer wheels were 25mm.
The front was easy. At least it was easy for me. My home shop is well equipped with a lathe, mill, etc. I made bearing bushings with integral spacers for the front. Done.
The rear was a bit more complicated. The late model hub was .400" wider on the drive side. If this is the case for yours, the easiest thing to do would be to lace in the correct hub for your year.
At any rate, anything is possible with some research and work.
