Default Mikuni carb question

Today I picked up a 2000 Fat Boy. Previous owner said it has a 95 big bore and cams but not sure what type of cams. Also has stage 1. It has a Mikuni carb on it instead of stock. Weird thing (to me) is when starting it you have to increase the idle on the carb for a minute or so before adjusting it back to normal. Is this normal or is there a tuning issue?

FWIW........ In 2003 I put a Harley Screamin' Eagle Big Bore kit, 95ci in my Heritage. At that time, the HD SE Big Bore kits were coming with SE203 cams......

Anyone have any ideas what exhaust this may be? Previous owner said he though it was Samson but didn’t find anything on their website and wanna get heat shields so I can remove the wrapping.

If the wrap has been on for some time you'll probably find that when you remove it the finish is wasted. Heat shields might cover, or might not.
