Default Stalling Issue On New Build

So I bought a 2005 Softail Springer Classic (FLSTSCI) last year, and put a 300 rear wheel and made it right side drive. The bike has a High Flow air filter and it had fishtails, so basically open pipes, but long open pipes. The bike ran fine when I rode it home. I got rid of the fishtails and replaced them with 10" Supertrapps with a 2.5" hole cut in the end cap, so basically an open pipe with a 10" open muffler on each pipe. The bike now cuts out 3-5 minutes after starting it and just letting it idle.

I also painted the engine with engine paint, not bike engine paint, just regular spraycan engine paint. Now the bike wont run longer than 3-4 minutes from cold and cuts out. I thought maybe it was overheating but a shop and now a Harley dealer is telling me its not the paint, and by the way, they "dont want to get into it". I called Love-Jugs, who make fans for air-cooled engines that mount to the horn bracket, they told me to measure the heat at the back sparkplug, if its around 400 its too hot. I will try this. Has anyone out there had this issue? Any ideas would be great? Thank you.

You say, "new build". What's the build mean in this, I see nothing listed other than intake and exhaust. What was the last thing you did before it started shutting down. The more you did at one time makes it tougher to nail down. How is the fuel managed? Anything you changed probably upset a previous tune? That would be my guess.
oh, I don't believe the paint has anything to do with this. I think it's some mod you made. Don't just start throwing this n that at it without knowing the real problem.

New build is 300 rear tire, right side drive, crossbones tractor seat and front fender, shorter handlebars, The last thing I worked on was the clutch. I didnt think all this stuff except the pipes and the paint mattered because they dont have to do much with an engine running right, especially if a bike is sitting still. I dont know how the fuel is managed. The computer looks stock to me, but this is my first softail so I wouldnt know. A parts guy at the HD dealer said that if it had fishtails and the highflow air filter, it had to have had a special tune for that. But I didnt get a tuner for the bike nor did the last 2 owners.

If it was me, I’d pick up a tuner. An engine needs 3 things to run. Fuel, air and spark. The bike fires up and idles (for a while) so I would say the spark would be the last of the 3 essential functions that I would dig into. To me it sounds like your air/fuel mix is off. Especially since the last mechanical upgrade you did was the pipes and the bike “ran fine” with the previous owners.

I took it to a shop Saturday that seems a much better fit. Seems the Harley Dealer only wants you to customize your Harley with their parts. Looks like a tuner will be needed.

Thats ok I took a 2020 FatBoy for a ride- quiet as a churchmouse, I couldn't even hear my bike cuz the dude on the Crossbones I was following was gettin' it. Weird test rides these days, someone goes with you. I guess there have been some issues. I could have not followed him and he would not have found me unless I wanted him to.
