Confusion on bars/risers

Default Confusion on bars/risers

I'll preface this first with an apology if this has been asked before. BUT.....

I'm a new HD owner, 19 Fat Bob 107, that I absolutely love and hate myself for not getting one sooner. I am looking into getting new handlebars. I've asked a buddy and he mentioned something about risers and handlebars but I also notice just normal handlebars at 11 or 13 inches for sale. So my question is, what's best? More suitable? Pros/Cons of each?

I'm also 5'8, so what size would be better for me?

Right now I have stock bars, but I do like the look of t-bars "Lucky 13 x Lucky Daves" style and I also like the look of Lucky Daves Peacemaker Risers with a pullback. But it all comes back to what's the difference and what's "better?" Thank in advance everyone!
