Can anyone tell me what rpms am I running at 50 mph on my 2002 Harley fat boy

All depends on your gearing and what gear you are in at 50MPH. The Gearing Commander calculator was useful when I was searching for a similar answer for me.

Baker calculator shows 2117 rpm in 5th @ 50mph

At 50, you should be in 4th. As the above post states, your only around 2100 rpm. Running that slow in 5th is hard on the engine,
especially under a load (hills etc)
Minimum rpm should be 2500

I don't shift into 5th til I'm doing 55 or 60

I will will wait until I hit 55mor 60 mph. The speed limit in British Columbia is mostly 55 mph or 90 km so I guess I will be OK

Actually, HD says to shift into fifth at 45 mph, if I recall correctly. I never do. I usually hit fifth at 55 or 60.

Lugging is load and rpm sensitive.

You can putter downhill at idle in 5th gear without any problems. You can't go back up the hill that way.

There isn't one single magical rpm for all conditions.
