That's not off the norm for my stock TC88
I track my mileage every tank and fill when near empty (cause I'm **** enough I want that 30-40ounce of 87 octane in the pump plumbing diluted as much as practical)
I've never seen less than 42.5mpg and have seen as high as 52
generally I'm 44-45mpg 90% of the time

OP, track "your" mileage for your riding style on your bike and places you go.
asking what "we're" getting, won't do you much good
'cause "we're" getting anywhere from 32 to 52 mpg
there's also no reason to "assume" how much your tank holds.
Unless it's a custom tank, the owner's manual (available PDF from Harley corp site) will tell you fluid capacities
quick google says stock 2000 softail standard is 5 gal

Ride until you run out of gas.
Note the mileage on the odometer. That's roughly your range. Stay under that.
Empty the gas can into the bike, and go refuel. However much you buy at the station, plus the amount that was in the gas can, that's about how much your tank holds.
I had a 2000 FXST. They're carbureted. He has a petcock. It has a reserve. No need for carrying extra fuel. Run it till it dies. Note the mileage. Switch to reserve. Drive to the gas station. Yinz are way over complicating this.
