Throttle Body Needed?

I need some help as I'm about to pull the trigger on some purchases and need help deciding whether or not I, in fact, need them.
I have a 2007 Heritage Softail with a 96" that has been modified with the S&S 110 power pack running the 585 cams. I am about to send my heads out to get ported and polished to run a 1.900 intake and 1.610 exhaust valves. Speaking with S&S they said they typically recommend running an 83cc or 85cc head with this kit as the cam likes high compression. The reason I bring this up is I was considering the 89cc super stock heads, but they said they didn't recommend doing that as it would lower my compression. So I then changed directions and decided to send my stock heads out.
Herein lies the question: do I need to upgrade my throttle body? They recommended that I run a 5.3g/s injector, but I forgot to confirm whether I can do this running my stock throttle body or if I need to get a 58mm throttle body...
The other question is, do I even send my heads out... The bike has 35k miles on it, so I would like to at least replace the valves and springs, but my concern then comes down to the valve seats, and I don't have the tools or knowledge to do that.

Send the heads out. Stage II.. 85 cc is a nice manageable combustion chamber. a 110"er with flat tops and 85 cc will give you 10.65:1 static comp or go with a +3 cc piston and have 11.16:1 static. that's with a .030" head gasket. Not a fan of the higher rpm 585's. At minimum 55 mm HPI with port matched 1.800" runners. yes 5.3 injectors. Don't forget a better flowing air cleaner assembly and exhaust.
