I'm 6'2 and have 12.5 apes. One question is how do you like to ride. Some guys with apes like to lean back. I like to sit up so I have my apes set up vertically. I'd look at how much pull back the apes have. My 12.5's have too much pullback for my liking even wit them set up forward.
Have you tried going to show or shop and checking out bars aleady on custom bikes? MOst HD dealers and shop will have a few bike with different bars on them. Find a similar model bike as your with a similar seat and see how it feels, then just find out what bars you need.

I did the HD Screamin' Eagle Deuce bars from the2003 SE Deuce.
They are wildly overpriced, but I think the bars offer the cleanest look you can buy. They're comfortable at 20 MPH, and comfortable andstableat 120. There is absolutely no exposed wires, even at the risers..
I dig the apes as well. I am 6 foot and run the 12.5 Wild 1 Apes. Took a little time to get used to but I wouldn't change them for anything else. They hit me slightly below shoulder level, and my hands have never gone numb.
