I have a gaurdian bell attached to the bottoms of each floorboard, when I hear the bells ringing I know Im about to scrape. This doesnt prevent me from scraping, just lets me know when its coming up..

Brake going into the corner and accelerate thru it. \\; As you accelerate it will lift the bike up higher on the suspension, giving you more ground clearance.
Not sure on softails, but on the touring line you can adjust the height of your floorboards.

scrape until you reach the supports, then you can feel the back tire lifting. replace when they get into the rubber inserts. you can buy used/new boards cheap on ebay.
