I don't have a jiffy-stand or anything like that but yesterday I checked it again after getting home immediately after shutting off the engine and while sitting on the bike keeping it held upright and now the oil came to the top of the indicator on the stick so I'm going to assume that it's ok... or would anyone advise against that?

Recommended checks at 1000 miles then every 5000 miles (5, 10, 15.... not 6, 11, 16) right? Now here's my ? .... I've seen online where it states that there's some recommended checks that need to occur at the 2500 mile mark for some models but wasn't clear as to what model bikes or what specifically needs to be checked?
A Jiffy stand is another name for your kick stand. HD kick stands are called jiffy stands because they lock into place when they are out and the weight of the bike is on them. Your oil level is just fine. As long as you dont have to little, you will be ok. Maintenance on your bike is every 5k miles example, 5k, 10k, 15k, 20k ect. not the 6, 11, 16. The 2500 mile maintenance is for springer front ends to check the fasteners and springs so you dont have anything to worry about at 2500.
about the stands... I thought kick & jiffy were different because it was stated to keep bike upright using jiffy stand. The bike leans when on the kick stand and although I have seen bike balanced using the jiffy (kick) stand (salesman was showing off) I am not going to attempt that (especially while performing maintenance). I've seen another stand where the bike is off the floor completely and assumed that was the "jiffy" stand.

Now, I'm going to buy a service manual and probably the owner's manual... but to satisfy my curiosity... what has to be done at the 5k mark besides oil & filter, and maybe checking the brakes? Are there important engine checks that take place at the same time? And, approximately how much will each checkup set me back $ ???
