In my opinion, if I was worried about speed I would have bought a rocket!!! It's all about the ride man. Saying that much, I've had my Deuce up to 105 and it starts to get loose in the front so I back off. I had a little more to go I think.
Had my stock Fatty to 110 once, still had a bit left, but I back off. I had to go home a clean out my under pants. Never will do that again. 75 is top for me.
On the German motorwaY (no speed restriction!) and coming back from a trip to Austria I had a go at this: it topped 180 km (111 mph). This is with a standard 110cu FatboyS, but with windscreen and bags... thought this was pretty impressive
Ok, so I really love my fatboy lo, even more so after reading the posts on here. I have a 2013 fatboy lo 103 stage 2, and let me say cruising speeds are 90-105. I have taken her to well over 120. No clue how fast the new charger srt8 top end is, but my step-brother has one, and he never stood a chance. Off the line I jumped out, stayed there and kept it hammered. He said he backed out at 165 because I was still pulling on him. I have no idea though as the speedo only says 120, gps on the phone said 168, but how accurate is that? (I have no idea). I have heard that the new fatboy S with a 117 will stomp my bike out. All I really know for sure, is that it's insanely fast for a cruiser, anything over 110 is skatchy because the bike is not meant for that. It's shakes, and shimmys. Not a speed wobble, just massive amounts of wind pushing and a lot of road vibrations. I have 12 inch apes on mine which gives the feeling of sky diving (ish).

168mph, wow.
A quick and dirty calculation for 168mph on a 2012 6 speed is 6200rpm in 6th gear.
With 12" apes... man that's fast.
Gotta get me a 103, my 117 is way slower than that.
