Default Newbe muffler query

Ok. I got a 2006 FatBoy with a 2-1 S.E muffler.
(English is not my main language so excuse grammar/spelling/syntax etc)

What I understand is that in order to clear the M.O.T I need to remove some kind of parts in the rear end of my muffler.

What I donīt understand, is how will removing parts make my bike more quiet?
Please explain.

Some pipes are tunable by disks that can be added or removed. Here is an example.

"The Supermeg 2/1 offers the performance and customization that only a tunable exhaust has to offer. Adding 4” discs will increase the horsepower, exhaust tone and flow. Subtracting 4” discs will reduce the sound and increase low-end torque. Includes twenty 4" disks and all mounting hardware.".
