Yes, the 07' seat is different. Better? I don't know yet. It appears to be an improvement with a tailbone detent in the seat. The passenger seat doesn't provide as much back support for the driver in my opinion. May be a toss-up.

Answering some of your questions:
1) No, the FatBoy bars are not the '07 (internally wired) ones - they are essentially '06 spec bars. The '07 bars are larger diameter and this would have meant different risers etc.
2) The reach to the FatBoy bars is fine - no real stretch at all. Width of bars, tip to tip, is about 34"
3) HONUS: Really interested in your PO edition Heritage - we don't get that model in the UK. Any chance of a picture? As you say, my pinstriping is grey
