Only two brands I like are Wild1 & Carlini. They both make HIGH END bars! Wild1 has 2 styles, the "Chubby" & "Psycho Chubby" series bars. While Carlini has 3 "Flyin' Apes", "Gangsters", & "Original Apes". Lots of guys run Gangsters & Chubby's. I am about to put 14" Chubby's on my Heritage... and I am only 5'10".
Carlini's are the best i've had as far as style and quality.
As far as height that all depends on where you like'em i'm 5' 10" and have 14"s and there perfect for me, but carlini's run a little tall.
here is my 1993 FXDL Dyna LowRider. Its got 4'inch Risers with 12 inch old school apes.. 16 inchs total height... Im 5'9 tall in height and its VERY comfortable but you gota learn to ride with apes... you dont turn the bars anymore in turns.... you LEAN into the turns!
