You will never get the potato sound with EFI. But an 11:1 compression ratio, major head work, a forward mount intake from Arlen Ness and Thunderheader -- combined with 585s will give you a hell of a sound and 93/103 HP/Tq. I know cause that's what I'm running...
I would like to hear you're bike run......Theres a vid on youtube of a fatboy lo with a thunder header 103" upgrade and cam and it sounds sick...

ok thanks guys my bike idles at 950 when it is warm it sound ok with the 203's but there has to be something a guy can do to get these things to be lumpier with out going to a 103 etc. What is the advantage of the 4 deg key.

It moves the power band to the left, earlier, a few hundred rpm. Builds up a little more compression sooner then not using a key.
Have read that some tuners allow you to drop the idle rpm. Some say not a good idea because it drops the oil pressure. I do not claim to know either way - just sharing what I read.
imo - ride it and enjoy it. Cant hear the idle when youre rolling down the road.
There is nothing you can do to get the sound I think you are looking for. Just ride it and be happy or get an older shovel.
A bigger cam might give you a rougher idle but it will also move your power band to the upper RPM level and lower the fuel mileage.
1000 RPM is the normal idle range to keep the oil pressure up and the engine cool.
I think you are looking for the impossible.
Look on youtube and listen to some of the engines running.
On my 06 SB I went from the 88 to 95 inch with 10.25 to 1 pistons. Shopping cams I opted of Fueling 574 cams and race roller lifters. Heads I picked out were ported/polished, flow tested with larger valves and heavy duty/high lift springs. Baffle I used are BCT Monster Baffles.
At idle it is plenty "lumpy" and you know it isn't stock....Looks stock though.
Give Fueling a call and chat for a bit, great people and they will point you in hte right direction even if it isn't they cams.
