You just have to get used to them. You may have been used to pressing down on lower bars to turn or balance. I'd ride them for a few hundred miles before looking at anything mechanical.

your problem is the handle bar clamps are rubber mounted. longer bars give more leverage and they flop around a lot more. get the stiffer Polyurethane Heavy-Duty mount bushings or get some solid metal mount bushings..that should take the problem away..

I had some wide low bars on my bike before changing to some much narrower apes. I wobble a bit more if I hit a groove or something. I suspect one thing that plays into this is that you have less weight resting on the apes or at least the weight is hanging onthe apes in a different direction than lower bars. Just ride and it goes away. Probably you adjust your technique or something after a while.

What helped me, tighten the steering head bearings just a dab. Then realize the wind is now catching your arms and that's transferring into the steering, take your time, get used to the bars and soon you will never be without them.
