Default 1993 fatboy

I have a 93 fatty with 28k miles, just had edelbrock heads, new pistons 10 over, new cam, new edelbrock carb... but the carb didn't fit according to the mechanic so he tweeked the stock carb and put it on. My question, am i losing the advantage of the new cam, pistons, and heads because of the stock carb, even though he jetted it and polished it a bit and drilled a hole or two in the tweak process? I feel that all my effort and expense has been restricted due to the carb issue. Please tell me I'm wrong or how to tell if I am getting the performance I should be getting with all the upgrades..
