Some people say just do a few heat cycles and ride it normal. Some say to stay under 3500 for 500 miles. I don't think ones more wrong than the other.
An important factor for break in is proper tuning. If you have efi it would require a Dyno tuner. Some companies will send a base tune with the kit.

Dan is correct. Conventional oil for break-in. I was told to heat cycle in 30 second increments building up to 3 minutes, then a 10 mile ride, then ride normal without blasting or lugging it for 1000 miles. 3 of us did builds from 3 different suppliers at the same time and all received the same basic info.
Not to take away from the S&S kit, but there are some excellent alternatives. Hillside is one, Big Boyz can help with headwork at reasonable prices, and Fuel Moto offers a whole 98" kit with upgraded cam chest components to bring your cam assemblies up to current specs and ditch the spring tensioners.

Break in was told to me like it was Dan and QC. Conventional oil for the first 500-1000 miles. I was told I could take it to 5000 RPMs, but not to hang there long.

Cams make a huge difference in the torqueyness and pair well with the displacement. I see no reason you couldn't keep up with your pals on 96s and 103s. Make sure though that you address the fuel system, with a tune for efi or carb adjustment.

With my 98" FM kit and their heads, my 03 Heritage Springer runs like a raped ape.

You guys got me wondering on this now, how long after break in should I wait to put it on the dyno and have it tuned? Where in CO do you guys go for dyno work and tuning, I bout did it last year at Rally but I've heard since then not to do it there cause they wont stand behind it and its a long ride home from South Dakota with your bike running like a turd...

I plan on doing it right around the 1000 mile mark. There is a place in Arvada named Roadies I'm thinking of. Also Fay Myers which is right down the road from me has a certified Powercommander dyno which I'm going to look into. Sanger's in Ft. Collins is supposed to be pretty good.
