Default Stage 1 questions

I've had my bike for about 5 weeks now and I've been reading the forums every day to get a better understanding of what is what. Wasn't thrilled with the sound when I rode it off the dealers lot but had learned that isn't unusual. Same when I learned how the bikes are choked down due to EPA regs. So, I just ordered pipes, hi flow breather and a tuner. I had went to 2 dealers to get quotes, both came back in the $2k range, a little north actually, for VH BR 2-2, SE heavy breather and SERT installed. A lot of reading has convinced me to look at doing the mods myself. The only difference is i decided to try the new VH Fuelpak FP3. Although it seems like the tech support isn't quite there yet (manuals/instructions/online tech help), i do think I can get there. I've watched every you tube video on pipe installation, FP3 hookup, tune and flash, etc. but no matter how many times I watch, I know I'll see some things different so I'd like to ask a couple questions.
I don't have the service manual, do I need it before I start the install?
I assume the ECM data port connector is under the seat somewhere and not near the ECM itself which I understand is behind the rear fender and access requires removing the tire and fender?
I'm not clear on 02 sensors. I have to remove the rear wiring, attach to the pipe then re-run the wiring back? Assume this is because there is not room or enough slack in the harness to install the sensor without removing?
Videos don't show installs using torque wrenches. Not necessary?

It's probably pretty obvious from my questions that I'm new at this so any tips or advice would be hugely appreciated.

If anyone is interested, I got everything from kutters. Pipes for $564, SE heavy chrome $263, and FP3 for $300. $1127 for everything. So, if I can pull this off myself, I've kept over a grand in my pocket. I do realize I'll be missing the "perfect" tuning from the dyno but I don't think I need that right now.

If you are going to do the work yourself, my advice is to get the HD service manual, before you get started.

I just changed the ex myself w no instructions at all. was easy but I'm pretty mechanical. helps with a friend. Find a friend who has experience and it's even better. this weekend I do the SE heavy breather and remap with a vigilante. Agreed that you don't need dyno for these simple changes, tuner will be plenty close. so close it would be hard to measure on the dyno if a "pro" tuned it. And not all shops have pros either.
