Being a business owner, I would put the advisory on the invoice, have them sign it, and do the tire.
And fwiw, knowin how the bike handles with dunlops, it will be interesting to see how she does with mismatched, he notion of under or oversteer based on one tire being softer or firmer than he other will be interesting, I will expect some type of weirdness, but what idk.

I don't know about your side of the metroplex but in Ft. Worth it's pretty warm today. Don't know if "Global Warming" has anything to do with it but I can be certain the size of your "spare tire" makes it feel hotter.

As a past repair shop owner the customer is always right even if there wrong. I would advise that the stock set up is standards. If you wish to have it your way please sign the work order for release of liability on the work performed at your request.
The only thing is that the release of liability won't hold up in a court of law if there is a death involved in the repair or parts installed by the shop.

Also a business owner, that's what I'd do as well. Not foolproof, but many of us try really hard to honor consumer wishes, while not exposing ourselves unreasonably to lawsuits.
Have I ever experienced a problem from "mis-matched" tires on a motorcycle? Not so far, and I've done it plenty of times, including on my sportbikes.
Sure, probably don't want to put a race compound tire on one end, and a high-mileage tire on the other end, but I suspect that's already pretty obvious to most people who post or read here.
