I commuted daily in Socal traffic with a jockey shift and floot clutch on the same Sporty because I wanted to clean up my bars and get rid of a clutch lever. It was cool but it kept breaking the cable so I ended up switching back eventually. I still miss my clean bars.

So if I've read this thread correctly (admit I just quickly skimmed
the first few pages), you're looking to remove 'stuff' to make
the bike lighter ?

IMHO, there's not a whole lot you can do(quickly/easily).
Chop the rear fender, cut the struts down, and consider a
Lithium battery (much smaller size & loose ~7-8lbs) are
about the easiest things to do fairly quickly.

Do a 1200-1275cc upgrade, the performance increase you
get from that may change your mind as for the need to 'remove stuff'.
