My problem is that when we are both on the bike it sags a little more than I would like, and I live in Pennsylvania so the roads are... let's just say "not the best." We've had a couple of hard hits and bottomed out pretty hard, which I'm hoping can be alleviated. I guess the real question is: Can I fix this problem by adjusting the stock suspension, or should I look into getting some aftermarket springs? My local Harley shop is closed because of the quarantine and virus, so I guess I'm hoping that the stock springs can be adjusted and make the ride a little easier on us.

With the stock suspension, just try adjusting the rear til it gives you the most comfortable ride for you and your girl. There is no formula, other that what feels best for you.
On the stock front suspension, you can try adjusting the sag, and also try different weigh fork fluids, you can probably get some improvement out of them with a little effort and a few bucks.

2019 "low" touring rear shocks on my 2007 1200.
Took 15 min to install and raised the bike up a bit less than an inch. Used the sportster hardware.
TREMENDOUS difference. Of course I'm a 370# guy lol. I took the preload out and it was soft with my big *** on it. Whole bike feels much better.
