The travel does vary from manufacturer to manufacturer and shock model.

The HD shocks on the latest Sportsters do have more travel in the longer length.

Premium Ride Emulsion Shocks – Standard Height Part Number 54000076
Free length 13.36 " Compressed length 10.2"
Travel 3.16"

Premium Ride Emulsion Shocks – Low-Profile Part Number 54000077
Free length 11.7" Compressed length 9.6"
Travel 2.1"

Several of the Ohlins S36 shocks for the Sportsters offer travel around 4"
HD 145E
Shock Length: 11.5 in / 296 mm
Travel: 2.8 in / 71 mm

HD 916E
Shock Length: 13.25 in / 338 mm
Travel: 4 in / 103 mm

HD 146
Shock Length: 14.25 in / 360.5 mm
Travel: 4 in / 101 mm

The Ohlins 916E are great though pricey, work well on my bike for solo or two up. For the forks I went with the HD SE fully adjustable cartridge kit and it works really well too (so did Shanneba IIRC). Total cost for both was about $1100 but well worth it for the greatly improved ride AND my bike now rides slightly higher than even stock Roadster height...

Congrats on your new Iron 883

With the stock suspension, just try adjusting the rear til it gives you the most comfortable ride for you and your girl. There is no formula, other that what feels best for you.

On the stock front suspension, you can try adjusting the sag, and also try different weigh fork fluids, you can probably get some improvement out of them with a little effort and a few bucks.

Here are some reports you can use to get some basic knowledge on front and rear suspension, as well as a comparison of different aftermarket suspensions, should you choose to go that route.

I put 10 inch progressives on my 91 Sportster and it handles great but I ride alone the stock ones were 14 inch
some guy said they look like they came off a dune buggy

2019 "low" touring rear shocks on my 2007 1200.
Took 15 min to install and raised the bike up a bit less than an inch. Used the sportster hardware.

TREMENDOUS difference. Of course I'm a 370# guy lol. I took the preload out and it was soft with my big *** on it. Whole bike feels much better.

When I got my bike the adjustable shock was mounted the other way round so you could get to it with saddlebags in place.
