Why? Nothing to gain by it.

Yes you can run an 18" rear if you can find the parts. TC Bros Choppers is the only place I have seen were you can buy either a 19" x 2.5" or 18" x 2.5 Sportster rear wheel. They were out of stock on these last year when I was building my Scrambler. So I had to build my own. If you want a wider than 2.5" rim you just need to find one that is a 40 hole rim. I am sure you can pick up a stock rear Sportster spoked wheel hub cheap. Then get with Buchanan Spokes to figure out what spokes you need. I built my rear wheel with a 18" x 2.5" Borrani chrome steel 40 hole Moto Guzzi rim, Buchanan SS spokes and the stock 97' rear hub. G.B.

Yes you can, although you are limited with what you can do for tyre width, without going to other expense. I think you will find the narrowest suitable rear tyre is a 160/60ZR18, which requires a 4.5" wide rim, so you need to check that you have clearance for it. Note that size is a Z rating, which while it means you will be able to travel at hypersonic speeds, on the rear wheel at least, it is very much a sports bike tyre and will have significantly lower mileage life than your current stock tyre.
