While I understand that this is a highly subjective issue- what jacket would you pack for a desert trip in the winters (balmy days and cool nights) with passage through cold foggy country (ingress and egress) ? A winter jacket or a three seasons jacket?
I have a Harley Vanocker touring and a Revit tornado 3. The Harley jacket has barely any ventilation and is water proof which makes it ideal for winters but it may get toasty in the sun .
i may be overthinking the entire thing but any inputs are welcome - expected temperatures 20 degree Celsius in the desert and lower in the foothills .
Why not pack both, or are you limited on space to stash one on the bike? You could always switch out, if you needed to, but you'd have them with you, at least.
I am not yet packed but envisage low space. I am running a pair of saddlebags and a duffel bag which straps on top of the saddlebags. One small assault pack has the bike care kit like the bottles of octane booster , filter cleaner and oil kit and cleaning supplies. Packing both is a good idea but seems like overkill.
I did a quick conversion, 20C = 68F. I have no idea what jackets you are talking about, since I can't get either one here in Texas. My choice would be the lighter jacket and a sweatshirt IF needed. Much easier to pack that 2 jackets. Doesn't take much thinking, just common sense.
In Ukraine we can have hot (up to 30C, but definitely not what I get in UAE now) days and chilly nights during May.
Leather jacket, wool sweater, fleece under-pants were fine during my travels. Fleece and wool can be easily tucked away into a very little space.
Out here in Southern California, the deserts get bone chilling cold at night, close to freezing, and stay cold till the sun comes up a bit. I hunt in the desert in the late fall for doves, and it's cold as can be sometimes before dawn, not a good time to hold the steel barrel or receiver. Lack of cloud cover means all the surface heat goes right up in to the atmosphere at night. Are you riding at night, or just going to camp/motel for the evening? Maybe a rain shell and a nice fleece jacket? Thermal fleece undershirt and a leather jacket? That's kind of how I do it.
I think the best strategy is what I do for backpacking into the mountains, layering. You can mix and match for all contingencies. Thermal underwear, fleece pullover, down jacket, rain shell.

Noted with thanks! I plan to not travel at nights and check in to my hotel at night. There are a **** ton of antelope and feral animals on the roads which make the driving no fun.
