Does your bike use the same fork tubes as the Roadster, with only a different damper tube? I thought that was how they lowered some models and not others.

I do not know if the upper tubes are the same length between the Iron and (older) Roadster
models, but the lower sliders are "roughly" the same. I added the RH lower slider from
a Roadster to get the RH side caliper mount.... I kept the Iron springs and just changed
out the damper tubes to obtain the taller length. My springs are original, but I also
have a set of Ricor Intiminator valves.

I have a lo and I put in a standard length not low progressive monotube kit in and raised my bike inch and a half. I was going in the same direction as you with the fork extensions but the progressive is a lot better option and you get much better handling. This is after I raised it

Since the fork is being disassembled, that is why I suggested a new set of fork seal kits....

I don't know about cartridge kits since I have never installed one. I believe that they
have different "height" options as well. The cartridges you purchased may be "stock"
height for an 883....

There were 2 options, one for stock height and one for lowered. I got stock height.

So at this point, should I stick with the monotube cartridges and stock height? Or should I return the cartridges and get a set of Progressive springs with longer damper rods?

Yeah, so now I'm trying to decide whether I should have the monotube cartridges but at stock height, or if I should go with Progressive springs and longer damper rods?

What you might do is see what the Progressive monotube cartridge part number is for
a 2010 XL883R Roadster and compare it to what you have for a "stock height" XL883N Iron.
If the Roadster kit is taller, I would go with that.

2013 XL883N Iron is cartridge #31-2515
2010 XL883R Roadster is cartridge #31-2513

I used progressive monotube stock height cartridges simple install and I didn't need to replace the fork seals as they were not leaking or showing any signs of wear. You will like the improvement

Extended dampers like the TrakerDie/TillDeath stuff will get you height, not travel. You need longer springs and tubes to get more travel. The longer dampers just push all the stock stuff up higher inside the stock tubes. Since travel doesn't change extending the stock tubes higher out of the sliders doesn't present an issue.
