One thing I have been meaning to ask.....
On this 883, the throttle doesn't really seem to be quite on from takeoff. If you rev it up a little and go, it's fine...but if you just take off it seems to lag a little. My previous ones didn't do this, and was just wondering if it's normal for the bike.

I have heard something about some of the 883's coming from the factory not set quite right. I have the Screaming Eagle carb kit, so I would figure they set it right when they put it in, but then again you never know.

If you are willing to spend the $$$, get a Mikuni carb, much better throttle response. Give it a little more gas before you take off, it will help.
Remember when I had my Honda NSR250 2 stroke bike 15 years ago, I always hit 7,000rpm, dump the clutch and take off lol.
Ditto on what 128auto said. Also, Dynojet & Thunderslide make carb kits that inprove the performance of the stock carb. They do more than just replace the jets. A mikuni or reworked cv carb is quite capable of giving throttle response that will rival stock HD EFI.
what a can of worms. first off if you have the screaming eagle dyna jet kit there is no slow jet included. you have to drill the slide and install there lighter spring also the main jets are different size than oem with the same number. to compenstae for the slow jet the needle has different notches to shim the needle up allowing more fuel at lower throttle positions . before I started throwing things against the wall and seeing what stuck I would drop 50.00 on a dyno run and find out what my air fuel ratio was and where the dip was , then it would be easier and less costly to fix.

I do not get smooth starts trying to start off in idle. I do get very smooth starts with about 1800 rpm (guessing - no tach) and letting the friction zone control the speed. Same in slow traffic. I have the screaming eagle A/C and carb jets / dealer.
