The '04 and up rubber mounts do isolate some vibration, but they don't ride like you're sitting in your easy chair either. I think the rubber mounted Sportsters are nice, but I don't believe the difference between them and the 2003 and earlier Sportsters is as dramatic as some would like you to think. I'd certainly have no qualms with a 2003 from a vibration standpoint.
Found a fair deal on an Anniversary 1200C thatI like butam wondering if I should hold out for a 2004 or newer because of rubber engine mounting?

Try an 04 or betterand decide for yourself. Run it at all speeds, up through 70 and make a determination. Do a search on this board and check out the comments. In my opinion there is a significant difference, but many people don't mind the vibration. Its really your preference that counts.
I have little issue with vibration on my '96. It is fairly similar to an '03. I have ridden both the solid and rubber mountand found that the vibration difference is not a huge deal. ISO pegs and grips will help as well as thicker diameter bars with the vibration issues.
I test drove a 06 1200-L about a week back . I liked it a lot better but I have trouble with my right hand. So I went out and got me a 061200-C, just got it home today.

Well I got lucky [not with my wife] I calld the guy I got my 2000 1200-C from. He got a 06 1200-L he said come on over and drive it and see what you think.
Much better then my solid mount. Under acceleration I cold feel some vibs but not as much as my bike. When I was at steady speeds it is way better. I ran it at deferent steady speedsfrom 50 up to 85 mph and I loved it.
If I had to put a number on it, I would say about a 75 % improvement in the grips; and around 50 % in the foot pegs. The motor is a bit more shaky at idle, but I didn't find it a problem. Also the mirrors dont vib as much, I could see out them a lot better too.
So now Im shoping for a 05 or 06 1200-C.

Obviously I liked the rubbermount better - I bought one. The 03 and earlier models will be about 50 lb lighter, the forward controls are a couple inches more forward, and probably a little less to buy. The 100 yr aniv models have some nice graphics as well. Ride both and pick one, there is not a bad decision to make there.
Alot of the owners of rigid mounts will argue that there isn't "that much" difference. How much "that much" is can be debated. The point is that there is a difference. If you like vibration it shouldn't matter what you get. If you want less vibration, buy an 04 or newer. It's that simple.
