I've got 600+ miles on the conversion and I have'nt used any oil yet. One of the factors I didn't mention was that I was averageing 70 mph. I've noticed around town, the temp is lower.

Sounds to me like the motor is pretty tight. If you haven't changed out the breakin oil yet, do it now and get some good quality syn oil in there and a new filter. Let us know what that does for your temps. Mobil-1, Amsoil or Redline 20w50 V-tiwin.

Well that's good that it isn't using oil anyways. Others have reported high oil temps also over on the XL forums.

The highest my stock internal 1200 has gotten was 220*f on a 98* day in July. It was a poker run, so alot of slow and stop and go riding in a large crowd with little air movement. Average running temp is between 200-205* with dyno oil. You may want to check your carb jetting after the conversion. Lean=Hot, and if the carb wasn't properly rejetted after the conversion it is probably a little lean.

Flatlander is right. Based on your high temps at cruise speed only, I would look first at the main jet. You should need at least a #180 there.

Don't know about going to syn. But the first 500 miles take it easy, and I know alot of people that have gone to syn at their 1000 mile service. Some of those performed by dealers. So I am assuming(and I hate to do that), but if the dealer is putting syn in at 1000 miles I would say it should be ok.

Common misconception is ya can't use Syn until its broken in, thats just not right, many new cars come from the Factory with Syn, another is the temp, the worst enemy of Oil, any Oil, is high temps, but, just because Dino hits 250 does not mean it is automatically bad, it has to go above 250 and remain there for awhile.
Have the Bike put on the Dyno, make damn sure it is not lean, and the Slow jet is where to start on adjusting, the slow jet feeds fuel from idle all the way out.
