OK So I've already searched and found answers BUT I want to get some expert advice on storing MY bike. I have a 09 Iron with 4500 kms on it. I change to synthetics at 1600 kms. I live outside Toronto and its almost time to put her away.
Should I change my oil before storing it? Then again at my 8000km service?

Also is STA-BIL the only other thing to add? And should I keep my HD tender on all the time all winter? I'm a nOOb
You don't need to change the oil before storing the bike. If you don't run the bike in winter then you should put it on a battery tender. It isn't going to do any harm. Move the bike every now and then so the different parts of the tire are touching the garage floor.
Some say that you should change it before storing it because of the acids that accumulate in the oil from combustion. I usually change it but if the sun is shining in the middle of the winter and the roads are dry I will ride it on the new oil and put it back to rest.

Left over carpet scraps work great under tires for helping with preventing dry rot.
