Changing bars is really easy, you can go quite a bit taller without changing cables. As far as the grips, if they are the "rubber" type grips, get the bars off and for the left grip use a small screwdriver to pry the grip from the bar and squirt a little WD-40 in there and work it loose. When you go to put it back on, clean it out and spray a little hairspray in the grip and slide it back on the bar. That way you can avoid cutting it off of the bar.

If you change the handlebars, make sure you don't pinch wires, and the front brake lever has a switch built into it that is easy to break (the nub) if you don't assemble it correctly (you have to compress the lever and slide it on).

Oh, to get the grip off (left side) I spray a little wd40 in there with the little tube, slides right off. The right side comes off with the throttle insert.
