jbyun; keep in mind, your Nightster (883 or 1200) is probably bigger than most metric cruisers. Yes, 2-up is a difference b/c you're allowing for extra weight, movement, chatting, etc., but nothing a person can't adjust. If your sweetie decides to continue being a passenger, or take up riding - good for you. See how the future pans out & proceed accordingly.
Personally, I would prefer if she learned to ride and we can go on road trips together but doesn't seem like she's really interested and wouldn't want to force anyone to ride if they don't enjoy it.

If the sporty in your opinion is not a two up transporter that knocks out about 80% of the jap bikes on the market....as two up transport,
Most of my ridding is done with my wife as pillion,The nightster performs admirably and she's(My wife) comfortable,that's with the stock duel seat.
I did switch the mids to forwards which in my opinion makes longer trips more comfortable for my legs.H,
