does anyone use the old method of taking care of leather.
1 part vinegar to 2 parts linseed oil or you can use virgin olive oil instead
of linseed oil,i've used the old method on one of my jackets for about 25
years now still no cracking, still looks good.
My jackets really don't have a collar. You zip them up and there is a velcro strap at the top. Here's a pic of the lightweight one I have. The other one I have is an Olympia and has a liner but both kind of have the same collar.

Same here on the leather and mesh collar. Mink oil is great. Shirt style collar on my usual leather jacket as well, but the collar has invisible snaps so no flapping.
I also have another "classic biker" style jacket with waist belt - my first jacket, which is very comfortable also.
