I was in the same predicament. I opted for the 3" slash cut slip-ons from Vance & Hines. They are definitely louder than the SEs and are somewhat throatier than the short shots, which is what I was going for. I think stright pipes are just a bit too loud: I wanted to be heard without setting off car alarms in my neighborhood.
You'll also realize that there are different baffles. For instance, V&H makes quiet baffles, standard baffles and a "competition" variety. Likewise, Rush mufflers are available in different baffle diameters. If you go to Rush's website, you'll see (and hear) video clips of ride-bys on a Sporty and other models. In addition, you'll want to upgrade your breather and do a Stage 1 download at the least. Many folks get a tuner/fuel maangement system as well, although IMO it's overkill.
I suggest that you go to your HD dealer. Chances are, they'll have bikes in service or for sale used with different exhaust options that you can hear for yourself and decide.
