Did you do a load test of the battery? Did you put a charger on it or try to jump it off? Same with a car it may have enough juice to power the lights and fuel pump, but when you put it under a hard load such as a starter the voltage will plummet.

when you installed your new battery, was it fully charged? is this an aftermarket battery? did you disconnect the ground at the battery or where its bolted to the frame? reason i ask is the cable is really tight when trying to attach or disconnect from the battery. if you did it like this, possibly not thoroughly tightened. i always disconnected the battery ground at the frame and pulled it out with the battery, then reconnect to battery and fish the cable thru the hole in the battery box and bolt it back down. not saying you didnt...just making suggestions. when you say lights and pump activates but clicks when you engage the starter, sounds like a loose cable (pos or neg). and the bike shutting down while running down the road sounds like a loss of voltage, since you stated fuel pump runs. again, good luck and let us know what you find out
