The first picture shows the front fender really close to the crash bar. Is that true or just how the picture was taken?
With the HHI trees there is about 3" between the fender and the lowers. With stock trees it was less than 1". A lot of it is the design of the Fat Katz fender that is sticking out vs doing a wrapped fender.
Once you go tour pack, you'll never go back. At least that has been the case for me. I laugh when people want their bagger to look "cool". It's a bagger, not a chopper. It's built ride long distances.
If someone doesn't like my tour pack I politely inform them that it is good is my bike and not theirs. Function outweighs form in my case.

As you should. Never owned anything with a batwing and doubt I ever will. The apes are only 17". I'm short but bought the bike from a guy who was 6'7". I was thinking they might be a little high for me but I have been riding wit with those for almost two years. I'm quite accustomed to them.
