Not sure on a bike but had a very similar situation on a jeep conversion to a V8. Turns out the motor needed to be grounded. If I slightly depressed the clutch it would run perfectly, otherwise it sounded like you describe. Depressing the clutch grounded the motor. Got to be something like this or timing, can't think of much else that would cause the behavior you describe.
Cam timing is done right, made sure I did it correctly when I was in the cam chest. Plug wires are in the correct sequence. I'm going to adjust the pushrods again when I have free time this week. It all looks like that's the reason

Do a compression test real quick. That will tell you the condition of your valves, timing, etc. Also check for an intake leak by spraying WD-40 around the intake-to-head flanges while the bike is running.
