If you have a stock clutch spring & keep the cable cleaned & lubed it can last 10+ yrs easily. A stronger spring adds additional wear so it may not last as long.
I replaced mine at 60k miles, it's hard to tell when they're worn and if you've ever had one break it will ruin your day or trip. Putting a new one one at home is a lot easier than waiting for a tow truck out on the road. It's one of those things I'd rather replace too early than too late.

I couldn't tell you how long before they snap but, I can say that they do stretch out to the point that they can no longer be adjusted to specs requiring them to be replaced. You read threads all the time where people complain that they are out of thread on the adjuster, once the clutch pack is adjusted and the top threads are reached the cable needs to be replaced. Ive had good luck with Hill City Customs clutch cables and use them exclusively for clutch cables.
As a side note in respects to clutch cable adjustments, I found if you adjust them too often you will shorten the adjustment life of that cable (I couldn't tell you why, it's just what I've concluded). I only mess with them when the engagement of the gear or friction zone starts to engage right off the grip. That equates to double the spec measurement at the ferrel. I hope this makes sense.
I'm all for preventive maintenance and can't disagree with the advice here; but at the same time, I've never had one break, and my '03 FLHTCUI has 90,000 miles on its cable.
Throttle cables are another matter... .
stock cable on my 09 broke in 14 at about 25 or 30k, but i was guilty of never lubricating it. lesson learned...because that sucked (6 am leaving surgis to go home...didn't make it home that day)
