Another question for those who have upgraded the ultra. I felt a lot of heat from engine when we rode. Sounds as if there are corrections for this? How much to put on the true dual exhaust? Any other must haves for bike out of dealership?
All the '07s run lean, which converts to heat. Most notable on the UC with lowers. I did a stage one with a dyno which richened the AFR a bunch. this greatly reduced the heat, but could still feel some on the thighs especially when sitting at a light. the wife complained a bit about the heat from the engine/exhaust. I installed a set of saddle shields from rjsoriginal and it is a pleasure to ride, with no heat issues even when stopped.
The lean AFR is the biggest culprit and doing a SERT, PC or other fuel management device to richen the engine is a must.
If you want for both of you to be comfortable than the Ultra is your bike. I recently sold my 06 Dyna and me and the wife are now comfortable and enjoy all of the extra frills as well.
Picked up an 07 Ultra a few weeks ago, haven't been on the King since. You won't regret the Ultra and as earlier post stated, you can always get quick connect kits to strip down a bit.
I totally agree with the ultra king pac being easier to get into then the saddlebags. I just toss what I need to into the tour pac. I can fit the bag with all of my police gear when I need it. It beats wadding up a bullet proof vest and gun belt into the saddlebags. When I need to I put my gun belt in one saddlebag and then duty boots in other saddlebag. I can get my bullet proof vest, uniform (folded in half) and the Ultra tour pac bag with other stuff . I too thought I would get the detachable tour pac,, but I have got so used to having that much room I probaly wont take it off.
I have not used the head set for my CB/ intercom yet.
Get a good ride on the Ultra and the Road Glide.

Would probally be cheaper on you to buy the ultra and set it up with quick detach hardware. Then to go with a SG and add the touches to make it an Ultra. Just my $0.02
