At 6'1", you knees will be bent more with a lower seat. Perhaps you are in better shape than I am, so that doesn't matter to you. But remember, there are seats that look good. Then there are seats that allow a pain free ride for days.
Welcome! I have an 09 Ultra....I am 6'0 ft and feel pretty good with stock seat. But, Mustang makes several seats that put you in different positions on the bike.....lower, further back etc. While not cheap, they are great investments.
If you're comfortable with your seat and want the shorter windshield, take a look at Long Ride Shields. The curve at the top helps get the wind up and over yor head. They tell you on their site how to measure. I got one and really like it.
I don't understand how sitting lower helps a taller rider. That would put you closer to the floorboards which I think makes you more uncomfortable. Get a taller windshield!

At 5' 6" I'm also a bit mystified! To be comfortable we should be looking to keep our knees below our hips, not looking like a daddy long-legs with our knees stuck up in the air! Comfort comes before looks IMHO, so get a taller windshield.
Agree with what someone else posted that you should look at a windscreen with a recurve. It can be shorter in height but give taller screen performance because of the recurve at the top.
Agree with others. At 6' myself, I sit in the bike with my Mustang seat, wouldn't want to be any lower.
Shields with a recurve at the top allow you to run a shorter, better looking shield and still throw the wind over the top.
Two keys, measure twice, you want the shield level with your upper lip while sitting relaxed on the bike.

I recommend the more expensive elite series, it won't shatter like a typical lexan shield can.
At 6' and my mustang seat on my 05 Ultra, my height of choice is 9', measured center of middle mounting screw to top of the shield.
8 wasn't right, 10 kept me looking at the top of the shield in my line of sight, instead of just over it.
If you have the stock ultra seat, you may want to look at a street glide/road glide seat. You can find used ones here and on eBay for decent prices. Any seat from 17 down to 08 will. Fit your bike.
I will suggest you get your seat squared away before you buy a shield.
