Actually, manufacturers do not recommend leaving the sensors in place but not hooked up. Claim is that the Nernst cells will be damaged.
In the unlikely event one has a problem with a PCV, one can indeed just "unhook it" and proceed, even without the sensors. The ECM will throw trouble codes, but will allow one to ride well enough to get home.

I ran my 08 with the o2 bypassed for 50,000 miles. Then the programmer went bad. Unplugged the programmer and plugged the o2 back in and no problems. No code ever sent.
