I would suggest http://www.meancitycycles.com and have them redo your stock seat. I have had several mustang seats and found you had to put a lot of miles on them to be comfortable. Also the price is pretty high.
Welcome! I am 6'2" and my wife is 5'2" so I understand the issue. But I don't know of any seats that specifically elevate the passenger above where the Sundowner does. (I have a Tallboy which is essentially a Sundowner that pushes the rider 2" back and steals those inches from the passenger.) I'm afraid she's just going to have to look over your shoulder.
I've got the Mustang Wide touring and when I put the passenger pillion on it does sit my wife a few inches higher, unfortunately I am a foot taller than her so she is stuck looking around me no matter what. We went through a bunch of seats and they all had about the same rider/passenger height. Like others have mentioned you might need to go custom.
On my 15 Road King I did a ride from Colorado to California with the stock seats... Once. I was in pain and went with Mustang on that bike. For me pain was gone. So I'm going with what worked in the past. I have to say the stock seat on the Sport Glide seems to be better but I'm not taking the chance. Mustang wide touring and pillion was $$$. Missing parts (buttenhead bolt etc.) but Mustang is quick to send. Looking forward to getting them on and trying.
Welcome from Nova Scotia, Canada! Yes the RK is the best HD I've ridden, but the seat is terrible. I just bought a Drag Specialty 2 up touring....it does raise the passenger a bit, not much. Hope that helps!

Ultra seat on my 17 RK. This seat will set your passenger up but only you will know if it works. Give
