Yup. Pretty easy. Change mine from the mid baffle to the quiet baffle all the time depending on the ride distance. There arehex bolts holding the end cap to the muffler. Remove the hexbolts and pull out the end cap. Grab a pair of pliers and work the baffle out by moving side to side, up and down. Reinstall baffle after spraying with some kind of lubricant. Reinstall end cap and hex bolts. Nothing to it!!
I pulled out the baffles out of mine (bought the wrong ones I saw on a clearence rack at the HD shop ... they were for an earlier version).
I didn't use pilers. I, instead, used a punch and hammer and used easy taps on the hammer/punch from the small neck end. They came out very easily and I didn't risk damaging/bending the ends of the baffles since they have but up into the end-cap.

quiet ones you have to purchase and install
and preformance ones you have to purchase and install
is this true?
if so are the preformance ones any louder?
i had the SE 260 cams in mine and that was pretty loud
now have the Woods 400-6 cams and much quieter.
(still not quiet but i don't care or mind)
