Question:

A) At what approx rpm does it feel as though it's dropping off power too early?

B) And does the power drop off happen in any gear or worse in like in for example 3rd or 4th gear vs 1st & 2nd gear?

Things to chk out:

1) Maybe fuel filter is partially clogged.

2) Real dirty airfilter or an air filter that was cleaned or replaced recently thats been clogged/fouled with oil from crankcase breather.

3) Or could also be if someone applied for example K&N filter oil to a non K&N type filter thats not designed to be oiled post cleaning which will significantly restrict airflow limiting the motors top end/upper rpm power & perf.

4) Has the bike been sitting for any length of time where possible fuel (esp with 10% Ethanol) has degraded/is partially bad in which case i would drain tank,refill with fresh known good fuel along with 9oz of Chevron Techron (CONCENTRATED VERSION!) & see how that does. (Techron's Concentrated version is a more concentrated stronger cleaner then Seafoam)

5) If the bikes got a fair amount of miles on it or is more then a few yrs old tired plug wires can hold back top end perf/power too.

So if thats the case i'd rec replacing them since they are cheap and easy to replace to go along with the new plugs you just installed.

6) Could also be an issue with a fuel line to and or from f-pump in fuel tank have partially come loose and or have small hole/s in one of the fuel lines reducing fuel pressure & or fuel flow which happens due to vibration.

7) Not as likely to be the issue is if the fuel pump is on its way out not operating @ full efficiency/full pressure so have the fuel system pressure checked to ensure it's up to spec.

My buddy has a chopper with an S&S engine in it. Front plug seemed fine, rear way too lean. Got lots of advice on tuning, headers, exhaust and carb jets, etc, etc. Final solution was to go to a slightly cooler plug on the rear. Ingenious!

Just to rule out the plugs, I would replace them, check gap, tighten the tip, anti seize on the threads, dielectric grease on the tip to wire, and go on a long ride in a variety of speeds. Run a tank of good premium thru it.
Then pull and look at them again, and lets go from there.

Did you check the gap on the new plugs prior to installation? Those deposits actually narrowed up your gap, didn't have the spark you should have. Use top tier gas, premium. If you must use the additives mix the ratio that is on the bottle, i.e 1 oz. per gallon.

Update. Just a once over of what has and has not been done to the bike with some responses to questions asked in previous posts here.I got the bike about Friday last week. Since I have owned it I have put about 600 miles on it give or take. the first tank or 1/2 tank I got it with I noticed at 4th and 5th it would fall on it's face at WOT. I wouldn't say I notice it more at any specific RPM but definitely on the high side of things around 3500 plus. My solution was to run the gas out put in fresh premium non ethanol gas with a 1/2 a bottle of seafoam. Seemed to help it no longer falls on it's face it just doesn't seem to have any power in 4th or 5th gear abobe 3500 rpms when going WOT. If I feather it or hold about 1/2 to 3/4 it will eventually get more speed. Going WOT just basically makes it stay the same speed and rpm or speed up slowly and unless I go down a little hill. I took the pictures into a HD dealer today and the concensus of all the techs there are that I had moisture in my tank and that the plug might not have been tight. So I am going to run this tank out with the new plugs and then check them tomorrow to see what they look like. Also on the first tank I put in with the old plugs I got 31 mpg. This tank I got 39 and I feel like it rode it more aggressively.
I cleaned the air filter a couple days ago. It was a round screaming eagle air filter. blue rubber with white element and blue lines in it. I sprayed it with degreaser, lightly scrubbed it with a toothbrush and then rinsed it out and blew the water out with air from the inside out. Hung it in front of a fan for an hour and put it back in. I will be getting a K&N when I can afford it but for now the old one will have to do. Considering new plug wires. And Of course a oil change asap.

I never liked my SE Air Cleaner. Blowing it dry after washing is a no no. If you look thru it with a good light on the other side, you will see that the white gauze filter media is not consistent, with thin spots all over, you can fan dry it or lay it over a vent, it is still poor filter media. The K/N types are far superior. Mine is the A/N Big Sucker with their "Million Mile" filter that sure looks K/N to me. Good move to upgrade that, for sure.
Your plug issues do look like deposits, for sure. You need to burn a few tank fulls thru it, no doubt. Don't be afraid to twist it up on some long stretches, and burn the soot out of it! Get it up to temp and cruise. Don't you have someplace you would like to go - a couple of hours away? Do it!
