2003 road king Classic Surgeing

I have had this issue since installing S&S 510 cams in April of this year. It is more pronounced when cold. Starting off if I accelerate easy when the revs get up in first or to a lesser extend 2nd gear, the bike will feel as if it is hesitating and or ever so slightly bucking. You can hear it as well but its not loud. After the bike is warm its not quite so bad but still there. My plugs are burning a nice tan in colour. ( I know with efi bikes you can t go by that), and if I baby it, I can get 46 mpg (Canadian Gallon). I have a power commander 5 and have tried several maps. Bike starts and idles perfect and has a lot of kick when you get on it with no black smoke out of the pipes. Is it the nature of the cams to do that? I once had a 327 with a 3/4 race cam in it that acted the same, but I didn't think the 510's were all that aggressive. They are chain cams though.............
